Yesterday I got supplies from the Farmer’s Market and made curry!
Purple Potatoes, Striped Eggplant, Yellow Onion, Red Bell Pepper, Celery (stalks and some leaves)
Sauce: Usually when I make curry I do the 2 tbsp. red curry paste + 1 cup of coconut milk. (Or I get the Golden Curry blocks.)This time I thought I’d try Kikkoman’s bottled Red Thai Curry Sauce.
The sauce was awful. It had this bitter, acrid aftertaste. I doctored it with a ton of sour cream so I could eat it but even that wasn’t great. So in the future, I’ll go back to my old stand-bys.
On the plus side, purple potatoes are really pretty to look at.
